The idea for Fin N’ Tonic was born in the late-night hours, that magical in-between time when those cravings hit and there’s nowhere to go.
It started as a “wouldn’t it be cool if…” and quickly became a dream raw bar we couldn’t stop thinking about,
a place we’d want to both own and call home.

Founded by Sophia Vidal, former Director of Operations at TAG Restaurant Group, Fin N’ Tonic: Raw Bar is her first solo venture - a relaxed yet refined seafood spot nestled in Denver’s vibrant River North District.
Born from years in the hospitality trenches, Fin N’ Tonic is an industry-tested, guilt-free bar designed for you to ditch the fuss and make the best kind of memories - all over a perfect plate of oysters.
The menu brings fresh, unfussy seafood dishes that let the ingredients shine. Behind the bar, Sophia crafts cocktails with a playful twist, reimagining classic recipes and introducing brand-new creations that capture the spirit of the sea.
